Dinner Tonight: Picky Eater’s Dinner Ideas


Whether you are a mom of picky eater or you have fussy eaters at home, deciding menu for them is always a challenge! You are always in a dilemma what to cook and what not to cook. Quite frustrating isn’t it? Anyways today I’m sharing few recipe ideas that you can try for dinner.

If we take a general survey most picky eaters don’t like to eat vegetables. They like meat or chicken recipes more than any spinach or kale recipe. However, we all know vegetables are important too. So how can you make someone eat a healthy dish without making them realize, what they are eating? In today’s content I will also give some tips and tricks to handle the tantrums of a picky eater. So, let me ask you guys out – “Dinner tonight??!!” 

Anyways if you have any feedback please share with me, I really love your feedback as it helps me to understand the things better and it will help me to make things more organized and controlled. 

1. Spinach Pasta
You all have tried pesto pasta. It is basically made of basil leaves. What you can do is replace the basil leaves with blanched or boiled spinach or kale. Or mix spinach and basil in 50-50 proportion. Add garlic, salt, pepper and olive oil and mix the cheese. Now when you boil pasta instead of regular pesto add spinach pesto. It tastes great and this way you can make those picky eaters to eat healthy stuff. I will share the recipe in the next post.

2. Chicken Parmesan
A simple dish that you can try for dinner and it serves 4.
    Ingredients
  • 4 skinned and boned chicken breast halves
  • 1 large egg beaten
  • ½ cup Italian seasoned bread crumbs
  • 2 tablespoons butter, melted
  • 1 ¾ cup spaghetti sauce
  • ½ cup shredded mozzarella
  • 1 tablespoon grated parmesan cheese
  • ¼ cup freshly chopped parsley
Place chicken between two sheets of plastic wrap; flatten to ¼-inch thickness, using a meat mallet or rolling pin. Dip chicken in egg, and dip into bread crumbs. Now cook chicken in butter in a large skillet over medium-high heat until it’s browned on both the sides. Serve spaghetti sauce over chicken and bring it to boil. Cover, reduce flame, and simmer it for 10 minutes. Sprinkle with cheese and parsley; cover and simmer for 5 additional minutes or until cheese melt.

3. Hot Spinach and Artichoke Dip Pizza

It’s a healthy recipe made of spinach and artichoke and I guess best way to use leftover too. The flavors are awesome that all the picky eaters won’t miss it. 

4. Prawn and Mango Salad and Smoked Salmon Tart

This recipe is not just good for a dinner but it’s also amazing for any party or even for Christmas. The flavors are fresh and mouthwatering that it will be finished in just small span of time. 

These are just few recipe ideas that I am sharing. Best thing you can do is innovate. Try many permutations and combinations while cooking, some of them definitely will be a fail but if you get a good and interesting recipe, then it’s not a harm. Kitchen is like a place where you can experiment with ingredients and your love that you add in them. So, Dinner tonight?
