Simple Recipe for Weekday Breakfast

When it comes to simple recipes, we all want something easy and quick to make. In lunches or dinners we manage the cooking time but when it comes to breakfast; mostly we are rushing to our work, getting kids ready for school, packing their lunchboxes and many more morning tasks which make a morning like a marathon.
Each day you can’t just have cereals and milk. Breakfast is the most important meal of the day so it’s important that we should have protein, carbohydrates, vitamins and minerals, antioxidants and other important fatty acids. Thinking about all this, you might have imagined a huge list of recipes in your mind. But here the secret is to keep it simple and easy!

We are making a healthy recipe consist of toasted breads for carbohydrates, baked eggs in spinach and tomatoes for protein, iron, calcium, potassium, antioxidants and vitamins A, B2, C and K. plus to drink we have a berry-licious smoothie (mix of different berries smoothies) rich in rich in protein, calcium, riboflavin, vitamin B6 and vitamin B12 and other vital antioxidants.

Let’s start cooking then -

In this, first I will make the baked eggs in spinach and tomatoes in microwave. Do you know, microwave radiations kill the microorganism completely present in the egg! Additionally, microwave cook dishes quickly too-which saves time.

This recipe can serve a single serving you can make as many you want with these ingredients.
Preparation Time: 5 minutes
Cooking time: 2 minutes
Total: 7 minutes

Ingredients 
  • 2 eggs
  • ¼ cup feta cheese
  • 1 ½  cup fresh spinach (torn)
  • ½ cup chopped tomatoes (you can use tomato puree too as per your need)
  • Salt and pepper to taste 
  • Parsley chopped, to sprinkle (if needed)
P.S. You can also add cooked mushroom or any leftover.

Method -
Blanched the spinach in boiling water for 2 minutes. Now, in a microwave-safe bowl, beat eggs, mix cheese, spinach and seasonings to taste. Micro-cook  for 60 seconds on high. Stir and micro-cook additional 20-30 seconds till cooked but not dry. Sprinkle chopped parsley.
Serve it with toasted breads.

Now let’s make something to drink with this recipe. And a nice berry-berry healthy smoothie is the healthiest solution to it. This is perfect for light breakfast or for in between hunger pangs.

Preparation Time: 5 - 10 Minutes
Serve up to 2 glasses (8 ounce)

Ingredients
  • ½ cup fresh strawberries (you can also use frozen ones)
  • ½ cup fresh raspberries
  • ¼ cup of cranberries (frozen)
  • ½ cup fresh carrot juice or pomegranate juice
  • 1 medium-to-small honey crisp apple (diced)
  • ½ or 1 banana
  • 1 tablespoon of honey
  • ½ cup of yogurt (you can use honey flavored yogurt too but then don’t put spoon full of honey in it)
  • 1 tablespoon of lemon juice
  • Ice (lots of ice)
Note: To have a healthy drink, it is recommended to use fresh fruits and juices, but if you don’t have them; you can use the canned or frozen ones but try to get the sugar-free ones.

Method –
Put all the ingredients in the blender and blend it until it’s smooth.

Note - “Make sure to put strawberries, raspberries, cranberries, banana and apple first to make the smooth paste. Later add the juices and yogurt and at the end, put lots of ice and honey into this”.

And it’s done. A healthy energy packed full breakfast is ready to consume. Since my kids are in their growing age. I make sure to give them capsules of cod-liver oil or almonds for more nutrients. If you have such simple and healthy breakfast ideas, share with us too.
